Veggie Quesadillas

Here is a simple recipe with minimal ingredients and minimal preparation...and I did find some fun in it :)


Ingredients:

  • 1 tomato

  • 1/2 sweet onion

  • 2 cups of spinach

  • 1 cup mozzarella cheese

  • 5-8" flour tortillas (can substitute for other sizes)

  • salt, pepper, other spices

  • vegetable oil

Directions:

  1. Dice the tomatoes and sweet onion

  2. Chop the spinach

  3. In a pan, add the oil, saute the onion, tomato, and spinach (putting spinach in after the onion and tomato have cooked). Place the sautéed vegetables into a mesh strainer (this helps the tomato water not make the quesadilla soggy)

  4. Clean the pan, then heat the pan and add a tortilla, heating on medium for about 20-30 seconds on the first size and flipping it over, and add a handful of cheese on one of the halves of the tortilla - spreading it out evenly

  5. Wait about 5-10 seconds, next adding some of the sauteed vegetables on top of the cheese and fold over the half side of the tortilla. Cook for about 10-15 seconds and flip the quesadilla over, cooking for about 5 seconds, then removing the quesadilla to a plate on the side. Repeat for the remaining tortillas.

  6. Serve with salsa, other condiments, or as is!
