Here is a simple recipe with minimal ingredients and minimal preparation...and I did find some fun in it :)
Ingredients:
1 tomato
1/2 sweet onion
2 cups of spinach
1 cup mozzarella cheese
5-8" flour tortillas (can substitute for other sizes)
salt, pepper, other spices
vegetable oil
Directions:
Dice the tomatoes and sweet onion
Chop the spinach
In a pan, add the oil, saute the onion, tomato, and spinach (putting spinach in after the onion and tomato have cooked). Place the sautéed vegetables into a mesh strainer (this helps the tomato water not make the quesadilla soggy)
Clean the pan, then heat the pan and add a tortilla, heating on medium for about 20-30 seconds on the first size and flipping it over, and add a handful of cheese on one of the halves of the tortilla - spreading it out evenly
Wait about 5-10 seconds, next adding some of the sauteed vegetables on top of the cheese and fold over the half side of the tortilla. Cook for about 10-15 seconds and flip the quesadilla over, cooking for about 5 seconds, then removing the quesadilla to a plate on the side. Repeat for the remaining tortillas.
Serve with salsa, other condiments, or as is!
