Cranberry Citrus Oatmeal Bake

I wanted to clean out my freezer and pantry and now it's on repeat.

Ingredients

Dry Ingredients

  • 2.5 cups rolled oats (maybe a little more or less depending on liquid)

  • 2 tsp ceylon cinnamon

  • 1 tsp baking powder

  • (optional) dried apples (no sugar added)

Wet Ingredients

  • 1 tbsp vanilla extract (or vanilla bean paste)

  • 2 bananas, mashed or blended

  • 1 orange or 3 clementines

  • zest from oranges (or clementines)

  • 1 egg

  • 1 tbsp honey or 1 tbsp molasses (adds a deep warm flavor)

  • 1 1/4 cup of fresh or frozen cranberries, split if using frozen​​

    • frozen: 1/4 cup into batter, 1 cup right before bake​

Directions

  1. Zest the orange (or clementines) into a large bowl. Add oats.

  2. Peel oranges (or clementines) and put into blender with bananas, cinnamon, honey, egg, vanilla extract, baking powder and blend. Pour into bowl with zest and oats and stir. 

  3. Let the mixture sit for ~4 hours in the fridge to soften the oats, any longer will make the end result mushy.

  4. Preheat oven to 350 degrees F, Pour the batter into a pan (I use a 9"x9") and bake for 30-35 mins. Let cool for ~30 mins.

  5. Slice and serve. I like to serve mine with yogurt and sprinkled cinnamon on top!
