Cranberry Citrus Oatmeal Bake

I wanted to clean out my freezer and pantry and now it's on repeat.

Ingredients

Dry Ingredients

  • 3 cups rolled oats

  • 3 tbsp flaxmeal

  • 2 tsp ceylon cinnamon

  • 1 tsp baking powder

Wet Ingredients

  • 1 tsp vanilla extract

  • 1 mashed banana

  • 2-3 cups water/milk

  • 2 cups raisins

  • 1 tbsp coconut oil

  • 2 tbsp maple syrup

  • Up to 1 cup of ground/strained almonds, cashews, walnuts, etc from making nutmilk

Directions

  1. ​Combine all the ingredients except the baking powder.

  2. ​Let the mixture sit and absorb for at least 1 hour. If more than 1 hour, let it sit in the fridge.

  3. Preheat oven to 425 degrees F, add the baking powder and mix. Pour the batter into aloaf pan and bake for 25-30 mins.
