Banana Berry Oatmeal Bake

The counter had many overripe bananas, even after two loaves of banana bread and banana oat muffins...


...to the rescue comes the power of berries! (And also some leftover greek yogurt in the freezer). This recipe is vegetarian, but can be made vegan with a swap for a dairy-free yogurt, gluten-free, and refined-sugar free. I prepared all the ingredients in the baking pan, so a one-pan recipe, how great is that? :) If you eat the whole batch, it's only about 700 calories :P


Bake for a longer amount of time for more crispy edges and top layer.


Ingredients:

  • 2 bananas

  • 1/2 cup blueberries

  • 1/2 cup blackberries

  • 1/2 cup plain greek yogurt

  • 1/2 cup water

  • 1 cup rolled oats

  • 1/4 tsp baking powder

Directions:

  1. Preheat the oven to 350 degrees

  2. Mash the bananas (can leave some clumps), add the rest of the ingredients and mix together well.

  3. Bake at 350 degrees F for 45 minutes. Let it cool for a bit and put it in the refrigerator, freezer, or cut a slice and eat. So easy!
