Vegan Oatmeal Chia Cookies

I wanted a breakfast/snack which was gluten-free, vegan, and nut-free. These cookies are honestly really good, soft, and chewy with all natural sugars. I definitely ate half the batch...

Makes about 7 cookies. Enjoy!


Ingredients:

  • 2 tbsp chia seeds

  • 1/4 cup unsweetened applesauce

  • 2 tbsp mashed banana

  • 1/2 tsp vanilla extract

  • 2 tsp coconut sugar (can omit)

  • 1/2 cup rolled oats

  • 1/4 cup oat flour

Directions:

  1. Preheat oven to 350 degrees F.

  2. Combine chia seeds, applesauce, banana, and vanilla extract. Set aside and let the chia seeds sit in the wet mixture for up to 5 minutes if you want. While waiting you can prepare parchment paper onto a baking tray.

  3. Gather the oats, oat flour, and coconut sugar and pour into the wet ingredients. Mix well and then spoon the mixture into cookie shapes onto the parchment paper.

  4. Bake for 10-15 minutes. Allow for it to cool...then eat!
