Savory French Toast

Finallyyyy, the first breakfast post...though, uncommonly enough, it is not pancakes...


It's french toast, yet, savory. Positive reviews from the family :)

Makes: 7 slices


Ingredients:

  • 4 large eggs

  • 2 tbsp. mustard

  • seasonings (get creative!): 2 tbsp. dried oregano, 1 tbsp. Mrs. Dash no salt, 1 tbsp. black pepper, 1/2 tsp himalayan pink salt

  • 1 cup almond milk

  • 2-3 tbsp. butter (cut into 1/2 tbsp pieces)

  • 7 slices of wheat bread

  • 1/2 cup mozzarella cheese

Directions:

  1. Whisk the eggs, mustard, and seasonings together in a larger area-based dish (baking dish, etc)

  2. Add the milk and whisk (this prevents the mustard from staying as a single clump)

  3. On a medium heated pan, melt the butter and place the bread in the mixture depending on the thickness and density of your bread, let each side soak for about 5-10 seconds

  4. Carefully transfer soaked bread slices to the pan and let the first side cook for about 2-3 minutes, flip it over and sprinkle cheese on top. Cook the other side for about 2-3 minutes and remove the french toast from the pan and repeat for the remaining bread slices
